Side dishes play an important role in our food culture from time immemorial. In their quest for diversity in taste, men have always come up with different kinds of dishes. Papad or appalam is such a great discovery as far as our food culture is concerned.
Papad has been considered an unavoidable supplement in the dining tables in India. The simple but delicious Pappadam has found a place in various cultures and peoples, irrespective of differences like economic status, caste, creed, place, etc. Papad is a traditional food item of India, which is usually consumed with Sambar/Rasam as a side-dish. They have the appearance of thin wafers and are prepared with a flour (usually Urad Dal flour). The flour, which maybe mixed with other ingredients that might include spices like jeera and pepper, is first made into a smooth dough with the addition of water. The dough is then kneaded and rolled out into papads, and dried in indirect sunlight for 4-5 hours. Finally, these are stored in air-tight containers. The papads are then deep-fried, roasted or grilled to produce the tasty dish that we relish and enjoy. Papads are available in various sizes.
